Potato Salad

Mary~Rose's Delicious potato salad

  • 5lbs cooked cubed red potatoes 
  • 1 chopped vidalia onion 
  • 1 cup good mayonnaise 
  • 1/2 bottle peppercorn ranch dressing 
  • 1/4 cup minced fresh parsley
  • salt and ground black pepper to taste


Cook potatoes, covered in boiling water, 10 minutes, or until tender; drain well and cool. Cut up potatoes in cubes with skin.

In a large bowl, combine potatoes and onion. 

Add mayonnaise, peppercorn ranch dressing. 

Stir in fresh parsley, salt and pepper. 

Toss gently to coat. 

Cover and refrigerate.
